ChankoNabe: The Sumo Soup πŸ²

This light and flavourful broth is PURE FUEL!

A high performance diet for sumo wrestlers in Japan. Sumo wrestlers are not just massive but extremely strong and this dish is full of healthy fats, protein and vitamins.

Just like other hot pot dishes such as Mizutaki, it is very healthy to eat, with plenty of vegetables and protein. Sumo wrestlers do eat a lot and because you can cook a large amountΒ at once, Chanko Nabe is an easy way to feed a hungry group quickly.

Chanko Nabe recipe:

1. The Broth

Beef/chicken broth, sake, Mirin, ginger juice, crushed garlic, soya sauce.

In Chanko, the base of the broth is chicken/ beef , seasoned with Soy Sauce, Sake and Mirin.

I however, substituted the sake with grape juice and Mirin with rice wine vinegar. ( googled substitutes πŸ™‚)

2. The protein

– Sliced pork belly -seared

– Pork meatballs – made with pork mince, onion, chilli and salt

– Chicken thighs- boneless and diced

– Prawns

– Fish fillet

– Fish cakes

Mmmmm…mm!

3. The vegetables

Any vegetable of your choice!

I added bok Choi, green onions, carrots and mushrooms.

Apartment from searing the pork belly and making the meatballs, this dish is literally a one pot dish!

Boil the broth and add all the ingredients into the broth to cook.

If you prefer some carbs as well, serve the dish over a bed of white rice or egg noodles.
